Red Lentil Curry Soup

I made soup last night at 10:30. I tasted a little bite to make sure it didn't need anything else, and it was so good that I ate a small bowl right before bed.

I'm having the leftovers for lunch, and it's so amazing that I wanted to share it as quickly as I could. Thus, the super quick blog post for the super quick soup.


Super Quick and Easy Red Lentil Curry Soup

2 cayenne peppers, sliced thin

2 cloves of garlic, minced

Sautee in a little olive oil until you can start to really smell the garlic, then stir into:

1 package of red lentils (green will work if you can't find red)

*I soaked mine in salt water for a few hours, because the last time I tried to make lentil soup, they absorbed EVERY BIT of liquid and I just had lentils without the soup. It worked, but it wasn't soup.

about a tsp of turmeric

about a tbsp of cilantro

about a tbsp of red curry powder (I love curry!)
salt and cracked black pepper to taste

Cover that with water and/or chicken broth until the lentil to liquid ratio is where you like it. Simmer on medium heat until the lentils are softish. Their color will fade as they cook, so don't be alarmed if your red lentils end up a kind of yellowy-beigeish.

If you're adding a lot of liquid - you might need more spice. I don't know, soup is a very personal thing. Go with your heart.

Thai-Peanut Sauce Recipe

Sunday I went to Whole Foods, which, to be completely honest, freaks me right out. It's so yuppie. It's so "Green Hills" if you're from Nashville. It's really pricey.
But, I know when I'm going in there that I don't have to worry *quite* so much about what I'm going to be taking home with me. They have lots of overpriced stuff. But they also have lots of stuff that I normally can't find anywhere. AGAVE COLA! Meaning, soda that I can drink without becoming diabetic. Pizza crusts that aren't sugar-filled and so.much.more.
One thing I found that I was anxious to try out was a ginger-peanut sauce. I make my own ginger-peanut sauce fairly often. It's super quick, it's easy, and best of all it's cheap. RECIPE BELOW! WOOT! But when I saw this sauce at Whole Foods, I decided to give it a try because what's quicker than making a quick sauce? Dumping a sauce out of a bottle. Granted, I'd have to cook whatever the sauce is going on anyway, but I was in a Whole Foods induced stupor. I remembered to take the picture of the bottle, but Dave had the camera - so phone picture it is.
And this is what I decided to do with my new ginger-peanut sauce. I decided to make um... Coconut-ginger-peanut-lasagna-with-kale-and-shrimp. Right. What is that, even? I don't know either. It was right after my workout, I was delirious, I was feeling experimental, and I was hungry. That's really a dangerous combination. Turns out, it's not terrible. But it definitely isn't recipe-shareable. It kind of tasted exactly how it sounds. I didn't finish the bowl.
The recipe that totally IS worthy of a share, however, is my Thai peanut sauce. I prefer it to the bottled kind that I bought, which is good, because it's cheaper. It's good with chicken, it's good over noodles, it's good as a dipping sauce... it's just good. My little sisters and I LOVE IT. Dave could take it or leave it, but we have opposite taste preferences. Mine has got some heat, but you could easily knock the heat down a few notches.
Thai Peanut Sauce
-2 cloves of garlic minced
-about 1/2 inch of fresh grated ginger (ginger packs a punch, so if you don't want heat, use less ginger. also, to store extra ginger grate it, wrap it up, and freeze it. Just cut off however much you need and it'll thaw as you're cooking next time!)
-1 1/4 cup of milk
-1 1/4 cup of peanut butter. *normal peanut butter is pretty darn unhealthy. It's loaded with sugar, which I didn't know until recently. I bought a jar of peanut butter that's only ingredient is peanut. This recipe is based around THAT type of peanut butter. Using "normal" peanut butter will throw the recipe off.
-about a tablespoon of low sodium soy sauce
-salt and pepper to taste (not really a need to add salt since you're using soy sauce and garlic salt, but Mr. Hagen adds salt to everything)
-3 pinches of red pepper flakes (again, use less if you don't want much heat)
-and about a tablespoon of garlic salt
-let the garlic and ginger sit in the pan for a bit to heat up and release their flavor
-add the other ingredients and keep stirring! if it sits, the peanut butter won't melt well
- let it all cook together until it's melty and heated through (such technical lingo)
Dave ALWAYS adds more milk to his bowl because he prefers it runny. I like my sauce to be thick... so if you like yours a little less "much" like my husband does, just add a little milk until it's the consistency you prefer.
Let me know what you think, if you try it. I'm pretty new to actually writing down recipes as I go. I'm normally an 'eyeball it and figure out what it needs later' kind of gal. Moral of the story: if you're shopping in whole foods and you see a version of something you make that you already like, save your money for Agave cola.

Snow Day Salsa

Mr. Hagen is addicted to salsa. Salsa before bed, salsa with every meal, salsa, salsa, salsa. I can enjoy a good salsa, too - but I'm a little picky.
Picky eaters find their way in life. Whether by refusing to attend dinner parties, or learning to cook things their own way, they clear a path for themselves. Since I cannot say no to a party, I made salsa!

On top of that, we had 4 or 5 inches of snow and ice here, and all I had in the house was a pile of oranges and LOTS of canned goods. This recipe uses almost only canned goods and dried spices. Perfect for snow days when you can't make a dash to the store.

Here's the recipe:

2 tsp of minced garlic
1 jalepeno diced

I sauteed those on the stove for just a bit until I could really smell it - plus, I've had a cold for like, 8 months now, I think - so my smelling isn't at the top of its game.
2 7oz cans of Salsa Verde
1 7oz can of chopped green chiles
1 13oz can of tomato puree
1 1/2 tsp salt
pepper to taste
about 1/8 cup of dried cilantro
1 tsp each of cumin, onion powder, garlic salt, and red pepper flakes
1/2 tsp of Chipotle powder

I let all the ingredients simmer on the stove for about an hour, let them cool, and then poured it into some cute Ball Jars and stuck it in the fridge. Which of course was the first thing Dave grabbed when he came home from work. His opinion - "Mmm. Good salsa, buddy."

A Miniature Christmas Party

A Christmas classic - The Grinch Who Stole Christmas
A Christmas Tradition - making cookies
Wreath Cookies Recipe:
  • 1 stick of margarine
  • 3 cups of small marshmallows
  • 3 cups of corn flakes
  • 3/4 tsp of green food coloring
  • just a bit of vanilla
  • red candies (or in our case, sprinkles)
  1. Melt margarine and marshmellows over medium heat
  2. Add corn flakes, food coloring, and vanilla
  3. Remove from heat and scoop little mounds onto wax paper
  4. Decorate with candy or sprinkles

Another recipe

Yes. I know. I am obsessed with food lately. Eating healthier is something that I put all of my energy into for a while, until it becomes normal to me, or it slowly tapers off into eating old junk food again. Since I am still in the all-I-can-think-about-is-eating-healthy-food stage, I am going to post another recipe today. I made a comment about this recipe on facebook, and have had several people ask me for the recipe, so I thought I should probably post it for all to see. It's simple, it's delicious, and it's quite healthy!

Cucumber Crab Salad

1 lb lump crab meat (I used imitation since it's so much cheaper, but it would be amazing with real crab)
1 cup of plain yogurt
2 tbsp olive oil (I just eyeballed it)
1/2 cucumber chopped
1 garlic clove minced
1 tsp dill (I would use a little less next time, just because the longer it sat, the stronger the dill became)
1 tsp mint
1 scallion
1 lime (zest and juice)

It's great on whole wheat toast, or in a wrap.

Fiesta

In the 4 years that Dave and I have been married, we've gone the last two and a half without a kitchen table. We do a lot of coffee table dinners. When we went home for vacation last month, we were able to pick up our table and bring it to the new house! I was thrilled, and decided to celebrate with a big Mexican fiesta - all homemade!


The menu:
Fish Tacos
Guacamole
Mango Salsa
Cilantro Lime Rice
and a Key-Limeish dessert thing (only kind of homemade, because I improvised with the recipe on the box)

Here's the recipe for my guacamole:
3 avocados
1 tbsp of minced garlic (I love garlic, so I use quite a bit)
about 2 tsp of cilantro (this is for dried, use less if your cilantro is fresh)
about a tsp each of garlic salt and onion powder
salt and pepper to taste
a sprinkle of cayenne pepper
zest and juice of one lime
Mix it all up and enjoy! You can also add chopped tomatoes and onions, if you like that kind of thing - but I prefer it without.

Souper!

I’m feeling pretty hungry this morning. I suppose I’m not back on track after all the holiday pigging out, and my body expects to still be overfull. Because of this, I have been inspired to share two of my favorite soup recipes with you all. I created both of these recipes earlier this fall, and cannot get enough of them! Feel free to share the recipe with all your friends and family.

Tortilla Soup
· 1 large can cream of chicken soup
· 1 large box chicken stock
· 1 can water
· 2 bouillon cube
· about 3/4 of a jar of your favorite salsa
· ½ bag taco seasoning
· 2 tsp chili powder
· cayenne to taste (we like it really hot, so we use about ¾ tbsp)
· ½ tbsp minced garlic
· ½ tbsp onion powder
· 2 tsp cilantro
· salt and pepper to taste

Cook all of those ingredients to boiling and let it simmer for about 20-30 minutes

Top it all off with:
· cooked shredded chicken
· sour cream
· Mexican cheese (I use shredded Mexican blend and crumbled queso fresco)
· tortilla chips


Chicken Wild Rice Soup
1 large can cream of chicken soup
1 can chicken stock
1 can water
1 bouillon cube
½ tbsp onion powder
cubed chicken
salt and pepper to taste

Simmer for 20-30 minutes (add rice and mushrooms just before serving)

Make one box of Zatarain’s wild rice mix according to the directions on the box

Sauté sliced mushrooms on the stove with butter, minced garlic, salt and pepper
